Are modern animal husbandry practices like de-horning cattle or castrating pigs good stewardship practices?

As we have been raising animals we are constantly questioning whether common practices are good stewardship or convenience. For instance God gave certain breeds of cows horns but it is routine practice to dehorn calves so farmers will not be injured. Is this a good practice? If so, why did God give cows horns? Same with early weaning of piglets, castrating pigs, etc… can a sow not wean her own piglets just like all other animals wean their young? Is castration necessary? Would love some thoughts from those of you raising animals.
